Fried rice is a very popular delicacy in Nigeria and China, it is generally accepted by everybody both at home and in the diaspora, the process of making this meal is a little bit complicated but gets simple with time. Here we will provide you with guidelines on how to make fried rice.

2 cups of rice
3 cups of sliced cabbage
3 cups of sliced carrot
1/2 cup of Sliced green pepper
1/2 cup of sliced onions
Pepper and curry to taste
Firstly, you parboil the meat with all the necessary ingredients (a teaspoon of salt, sliced onions, thyme spice, curry, one cube of seasoning. After putting all these ingredients, you allow the meat to cook for 15 to 20 minutes, then you taste for salt, grill the meat, you can deep fry the meat or barbecue depending on your preference, Don’t forget to reserve stock.
Cut the cabbage, carrots, green beans, and liver and put all into a tray.
Remove the white seeds in the green pepper and also slice them into pieces.
Parboil the rice and cook with half of the stock, the rice must not be too hard or too soft.
Heat up your cooking pot and allow to dry, then pour in about 100ml of groundnut oil or vegetable oil (margarine is also preferable).
Allow the oil to heat then put the sliced onions stir for 2-3 minutes, then add the already sliced carrot and green beans together with the cabbage.
Stir the whole stuff for 2-3 minutes and then add your curry powder (this curry powder gives the fried rice its yellowish appearance), meat stock, add your grounded pepper, seasoning,well-sliced liver, Add your seasoning then stir very well and taste, a little bit salt can also be added.
After adding all these you will discover that the yellowish mixture has an overly spiced taste, don’t be worried the rice will create the balance. If it doesn’t have the overly spiced taste then add more salt and seasoning for the meal not to be tasteless.
If the taste is good, then add the green pepper and stir for few minutes.
At this stage, add the almost-done white rice, and stir thoroughly.
Cover the pot and allow to cook for 5-10 minutes. Then your fried rice is done, and ready to be served.
How to make fried rice with shrimp
1 tablespoonful of vegetable oil
Well-sliced carrots[the back of the carrot must be peeled]
1 green well-sliced onions
2 cups of already boiled rice
2 or 3 Cloves sauce, chopped properly
2 tablespoonful of soy sauce
2 tablespoonful of sesame oil
1 large Whisked egg
Two tablespoonfuls of well-chopped greenish onions.
Defrosted Frozen peas
Heat the oil using a medium skillet under medium heat, add your well-grounded garlic and stir for 90 seconds, add your well-grounded carrots, pepper, saute’ for 3 minutes, then add your shrimp and Cook for 4 minutes stirring from time to time.
Stir in rice and peas and season the whole stuff with your sesame oil and soy sauce. Saute’ for additional 3 more minutes.
Put rice on one side of the skillet and also add the egg. Stir the egg continuously until is almost done. Then fold into the rice mixture. This delicacy can be well garnished with sriracha and green onions and your fried rice is ready to be served.
How to make fried rice with basmati
4 spoonful of vegetable oil
1 spoonful of salt
2 spoonful of curry powder
1 spoonful of thyme powder
A reasonable amount of vegetables(carrots, peas, cabbage, sweet corn)
A little amount of chopped spring onion
1 cup of precooked shrimp or chicken
A little amount of crushed red pepper
4 cups of washed basmati rice
Place a large pot with a good lid on moderate heat. Add oil, curry, thyme, seasoning, and spoonful of salt then stir thoroughly.
Add 4 cups of water. Increase the heat to make the mixture to boil.
Then reduce the heat, add the rice and stir thoroughly. The pot should be covered tightly( the pot should be covered with foil paper), allow the rice to cook for 25 minutes. After that, you set the rice aside to cool.
Place another pot on moderate heat, add oil and heat gently. Put all the remaining ingredients and cook for 3 minutes
Add your pre-cooked rice, meat and little water, add your seasoning as needed. Simmer for 3 minutes.

How to make Chinese fried rice
2 cups of water
1 cup of medium grain rice (white or brown)
Half teaspoon of salt
1 tablespoon of natural oil
1 cup of frozen peas and carrots preferably defrosted
5g of well-chopped ginger
5g of well-chopped garlic
2 raw eggs
3 tablespoons of soy sauce
15ml of sesame oil
Finely chopped green onion
Rinse the rice with a strainer to remove dust, starch or debris found on top of the rice.
Add 473ml of water to the pot and put on a high heat to boil
Add the rice and a little bit of salt, you can add 1tablespoon of butter(this is optional).
Cover the pot and allow to cook for about 20 minutes, drain the water left after the rice is done.
Turn off the heat and allow the rice to stand, this will allow the rice to steam for few more minutes to ensure it’s properly done.
Spread the whole rice on a tray and keep under a fan for 60 minutes.
The next step is heating your wok or frying pan for about 5 minutes.
Add 30ml of canola or grapeseed oil in it. (these are called neutral oils because they don’t have a strong taste on their own and don’t add extra flavor to a meal).
Add the ginger, garlic, onion, peas, and carrots into the hot pan or wok and cook till they all become tender.
Break the eggs and pour in one half of the frying pan or wok and using a spatula and when is done, mix it up with the vegetables.
Add the cooked rice together with the sesame oil, and the soy sauce.
Fry the mixture until all ingredients are heated through, this could take up to 5 minutes. You can add well sliced green onions to garnish your Chinese rice.
